Tumbling Proofer for Flat Breads and Pizza Dough

This video offers a brief look at a flat-bread proofing system, combined with a similar system used for proofing of sheeted pizza dough. For the Pizza dough proofer there is a reciprocator at the infeed and discharge points. The "tumbling" of the dough is a well known method for reducing the amount of air in the dough before baking.
